Over the past several years, I have gone back and forth with giving up meat. Recently I have decided to finally cut it out completely once and for all. Living in the midwest and growing up in Kansas, where beef is one of the main sources of people's livelihood; the notion of being a vegetarian gets several eyebrows. I have found it difficult several times in life to make the transition, meat is everywhere and who doesn't love a BBQ?! Plus my boyfriend is a big meat eater so  a lot of times it was just out of laziness not wanting to make two meals.

Alas, my decision came from years of fighting with health issues that I just couldn't quite put my finger on. Until I started keeping a food journal and discovered that I was eating a lot of meat and processed foods. Processed foods is a whole other conversation I will have in the future! So after doing a 30-day challenge which cut out all processed foods and refined sugars I found myself feeling so amazing and energized. I was on the Clean Eating bandwagon!

In this new series (which will be featured on Mondays, yes I know it's Tuesday), I will focus on healthy clean eating. Sharing my favorite recipes personal and from some of my favorite food bloggers. All recipes will revolve around whole grain and vegetable diets. Here is my first selection of Green Eats. Enjoy!
